Dice your white and green onions
Coat a pan with spray oil on medium/low heat and add in your cut kimchi, diced chicken thighs, minced garlic, and kimchi juice
Cook chicken until throughly cooked through
Then add in gochugaru and gochujang and mix well
Add in your Napa cabbage, onions, mirin, soy sauce, and black pepper and mix
In a separate pot of boiling water, cook your fresh refrigerated udon noodles
Once cooked, add them into a bowl of cold water. Once cooled, add it into the pan and mix well
Top it off with green onions and enjoy!
