Cut the thick cut bacon into small pieces then cook in a skillet over medium heat. Remove once crispy and drain on a paper towel lined plate.
Drain the excess bacon grease, leave 2 tbsp of bacon grease in the pan then add the diced onion.
Cook for 10-15 minutes over medium heat until they become translucent.
Add the bacon in the skillet with brown sugar, apple cider vinegar and Bachan’s Hot Honey. Cook over medium low heat for 10-12 minutes until it thickens and becomes sticky. Set aside for serving later.
Combine the burger, pepper jack cheese, seasoning, mayo, mustard in a bowl then mix thoroughly.
Stuff the burger mixture into the Hawaiian rolls container making sure it’s evenly distributed.
Place the burger patty on a preheated griddle over high heat.
Flip the burger after 5 minutes, then top with Colby jack cheese slices (optional).
Toast the slider rolls on the griddle over medium heat until golden brown.
Assemble the sliders with Chipotle mayo on the bottom, burger patty, bacon jam and a drizzle of Bachan’s hot honey.
Place the top of the rolls on the cut individually and enjoy!
