Season the chicken with salt and pepper.
In a small bowl or measuring cup, whisk together the honey, hoisin sauce, soy sauce, and lime. Add to the slow cooker. Add the garlic and ginger. Nestle the chicken into the sauce, turn to coat. Cover and cook about 2-3 hours on HIGH, or 4-6 hours on LOW.
Just before serving, break the chicken into bite sized pieces using tongs or forks. Toss with sauce. Serve over steaming rice, top with green onions and sesame seeds.See the cooking notes regarding thickening the sauce.
