Preheat oven to 350°F (175°C). Line a muffin tin with parchment liners or lightly grease.
In a blender, combine cottage cheese, egg, honey or maple syrup, vanilla, cinnamon, nutmeg, and salt. Blend until smooth.
Pour mixture into a bowl. Stir in almond flour and grated carrot until evenly combined.
Divide batter evenly among the muffin cups. Add optional nuts or raisins on top. Bake for 20–25 minutes until set and lightly golden.
Let cool for 10 minutes before removing from the pan. Enjoy warm or chilled.
