Start by getting some fresh corn and slicing it off the cob.
You can use the back of your knife to get all the extra bits as well.
Add some chopped bacon to a pot until crispy and then remove.
Then add one chopped onion, the light parts of the green onion, and some potatoes. Stir for 5 minutes
And then add in the corn and a couple cloves of chopped garlic.
Season this with some salt and pepper and then we're gonna deglaze with a cup of dry white wine
And then a whole box of broth. I'm using chicken broth here.
Bring to a bubble and then simmer with a bay leaf for about 15 minutes until the potatoes are softened.
Bring some of the soup and blend it up. You can also use an immersion blender here.
Then add back in a whole thing of garlic and herb Boursin cheese and stir until melted.
Top with some bacon, green onion and black pepper.
