Combine chicken, soup, onion, celery, bell peppers, broth, mushrooms and thyme in Crockpot™ slow cooker; stir to blend.
Cover; cook on LOW 6 to 8 hours or on HIGH 3 to 4 hours.
Stir in Monterey Jack cheese, cottage cheese, Parmesan cheese and egg noodles.
Cover; cook on HIGH 10 minutes or until cheese is melted.
