Beef Birria Tacos
  1. Preheat oven for braising beef.

  2. Remove seeds from chilies, toast them along with whole spices, and set aside.

  3. Cut beef into 4-inch pieces, season with salt and pepper, and sear in a Dutch oven.

  4. Sauté onions and garlic in the same pot, then add toasted spices, deseeded chilies, tomatoes, vinegar, bouillon, and beef broth. Simmer until peppers are soft.

  5. Blend the mixture to create a smooth sauce.

  6. Add beef back to the pot with the chili sauce and remaining beef broth. Cover and braise in the oven until meat is tender.

  7. Shred the beef and prepare corn tortillas by dipping them in the broth and pan-frying.

  8. Fill tortillas with beef and cheese, then pan-fry until crispy.

  9. Serve with toppings and extra consomé for dipping.
