Spicy Thai Coconut Soup
  1. Heat the oil in a pan over medium heat.

  2. Add the garlic, ginger, lemon grass, mushrooms and red bell pepper. Cook for 3 minutes.

  3. Add the sambal. Cook for another minute.

  4. Add the coconut milk, chicken broth, sugar and soy sauce. Bring to a boil.

  5. Reduce heat to low and simmer for 10 minutes.

  6. Discard lemon grass. Top with coriander.
