Perfect waffles

Serves 4–6

2 cups/290g all-purpose flour

3 tablespoons/40g sugar

1½ teaspoons/6g baking powder

1½ teaspoons/9g baking soda

1¼ teaspoons/5g kosher salt

2⅓ cups/550g buttermilk

2 large eggs

4 tablespoons/2 ounces/55g unsalted butter, melted, plus more for serving

1 cup/150g blueberries or 2 bananas, sliced (optional)

    Coconut oil, ghee, canola oil, or vegetable oil, for cooking the pancakes

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In a medium bowl (or the measuring cup you measured your buttermilk in), whisk the buttermilk and eggs together. Gently whisk this mixture into your dry ingredients—it’s okay if more than a few lumps remain. Add the melted butter and (still) gently whisk everything together, moving toward the outside of the bowl, until all ingredients are incorporated. Do not overbeat (a few lumps are fine, trust!). Mix in the fruit, if using. (If you like, the batter at this stage can be refrigerated for an hour or two.)

  3. For pancakes, heat a large nonstick griddle or skillet (preferably cast-iron if not nonstick) over medium heat for a few minutes, until the skillet is very hot. Add 1–2 tablespoons oil to the skillet and reduce the heat to medium-low. Using a measuring cup, ladle ¼–⅓ cup/60ml–80ml batter into the skillet (depending on how large you like your pancakes). If you’re using a large skillet (or a griddle), feel free to make one or two more at a time, making sure they aren’t spreading together to make one giant pancake.

    Once you notice a few bubbles begin rising on the surface of the pancakes and the bottoms are nicely browned (this will take 2–4 minutes), flip them. Cook until the other sides are lightly browned, another 2 minutes or so. 3 For waffles, follow the instructions per your specific waffle maker and make those waffles!

  4. If you’re making a bunch at a time, you can move the pancakes or waffles as they’re ready to a wire rack set inside a sheet pan, and keep them in a 300°F oven until all the batter is cooked and you’re ready to serve (I also don’t think pancakes or waffles need to always be served warm, so no need to do this step if you agree).
