Using a blender, blend all the dressing ingredients except for the oil.
With the blender running, slowly stream in the oil to emulsify.
For about 4 cups of salad mix, start with ¼ cup dressing and massage it well into the greens.
Add more, 1 tablespoon at a time, to taste.
Fold in the chopped almonds, then top with the remaining ingredients, tossing to finish if desired.
