Ina Garten's Orecchiette Pasta With Sausage And Broccoli Rabe
  1. Preheat the oven to 350 degrees Fahrenheit and prep the sausages.

  2. Poke each sausage with a fork multiple times and place them on a sheet pan.

  3. Roast the sausages until just cooked through, turning them once at the seven-minute mark.

  4. Heat olive oil in a Dutch oven over medium heat.

  5. Slice the cooked sausages into ½-inch pieces and add them to the pot.

  6. Sauté the sausage slices for about five minutes until browned.

  7. Add garlic and cook for an extra minute.

  8. Add crushed tomatoes, red wine, tomato paste, salt, and pepper to the pot.

  9. Turn the heat to low and let the sauce simmer.

  10. Boil water in a large pot and season with salt before adding the pasta.

  11. Cook the pasta for exactly nine minutes.

  12. Trim and chop the broccoli rabe, discarding the stems.

  13. Add the broccoli rabe to the pot with the pasta for an additional two to three minutes.

  14. Drain the pasta and broccoli rabe, reserving half the pasta water.

  15. Add the pasta and broccoli to the pot with the sausage and tomato sauce.

  16. Stir in Parmesan cheese and a splash of reserved pasta water.
