Tofu Tikka Masala
  1. Marinate tofu with yogurt, chilli powder, turmeric, coriander powder, cumin, smoked paprika, salt, dry fenugreek, oil, and garam masala.

  2. Cook marinated tofu in the oven at 189 degrees for 10 to 15 minutes.

  3. Heat 4 tbsp of oil in a pan.

  4. Add whole spices: 1 cinnamon stick, 2 cardamom, 3 cloves, and 1 tbsp of cumin.

  5. Once crackled, add 220 grams of chopped onion and cook until lightly brown.

  6. Add 240 grams of chopped tomato and 1 tsp of ginger garlic.

  7. Sauté for a couple of minutes.

  8. Add dry spices: 1 tsp of turmeric, 1 tsp of chilli powder, tsp of paprika, 1 tsp of cumin powder, 1 tsp of coriander, 1 tsp of garam masala, 1 tbsp of dry fenugreek, and 1 tsp of salt.

  9. Mix well.

  10. Add 100 ml of cream and 200 ml of water.

  11. Stir.

  12. Finish with fresh coriander and fresh chillies.

  13. Serve.
