Shred the chicken and reserve the bones for the soup
Slice the onion and ginger lengthwise
Char the onion and ginger in an air fryer or pan to create a rich smoky flavor
Add water to a large soup pot with the chicken bones, charred onion, charred ginger, star anise, rock sugar, soup base, and fish sauce
Taste and adjust seasonings accordingly according to soup base instructions for water ratio
Cook for about 45 minutes, occasionally skimming off fat and impurities
Remove the star anise and seasoning pouch before serving
Cook the pho noodles according to package instructions
Serve the soup with cooked noodles and shredded chicken, topped with condiments of your choice
