Sauté onion & celery in olive oil until soft, about 5 minutes
Add carrots, cook 2-3 minutes
Add tomatoes, zucchini & garlic, cook a few minutes
Add sea salt, black pepper, cumin, and turmeric — stir well
Add lentils & hot water (cover by 2-3 inches)
Bring to a boil, then simmer on lowest heat for 60-75 minutes
Taste, adjust seasoning, and serve warm 🤍
