Prepare pot to boil the pasta, prep your ingredients and get your equipment ready.
Salt water, boil pasta
Toss vegetables in olive oil, salt and pepper, roast.
Sautee garlic in olive oil until golden, add tomato paste sautee until slightly darkened, add water/stock. Stir until combined.
Add fresh cherry tomatoes and cook for 3 minutes.
Add Roasted veg and pasta. Mix until combined.
Top with feta serve with side of yogurt.
