Tomato and Green Bean Salad
  1. Blanch the beans briefly in boiling water, then transfer immediately to an ice bath. Drain well.

  2. Mix the shallot, olive oil, soy sauce, fish sauce and maple syrup together to make the dressing.

  3. Combine the tomatoes, beans, watermelon and Thai basil with the dressing and toss well.

  4. Transfer to a serving plate and finish with the chopped peanuts and serve immediately.
