Whisk eggs, cottage cheese, syrup, and vanilla in a large bowl.
Add flour and baking powder. Stir until just combined.
Fold in any optional mix-ins.
Preheat skillet over medium-low heat and lightly grease.
Pour ¼ cup of batter per pancake onto skillet.
Cook 3–5 minutes per side until golden and cooked through.
Serve warm with maple syrup or desired toppings.
