Make the dressing: In a blender, combine the scallions, cilantro, parsley, jalapeño, avocado, garlic, lime and lemon juice, oil and blend until smooth. Add the mayonnaise and stir until combined. Season with salt to taste.
Make the salad: In a large bowl, combine the pulled chicken, celery, scallions, snap peas, and apple. Season with salt. Pour the dressing over the salad and toss until combined.
