Remove the pits from the dates and chop them into bite size pieces.
Fry them in a tbsp of ghee and an optional drizzle of olive oil that gives a stunning flavor. Till they soften and start to caramelize.
Whisk the eggs with a pinch of salt then add them to the pan.
Let them cook on low covered for a couple of minutes.
Serve the omelette with a loaf of bread a cup of tea and enjoy.
