Miso Chicken Edamame Dense Bean Salad
  1. Season cooked chicken breast with salt, pepper, garlic powder and onion powder, then shred or cube once cooled

  2. Cook frozen edamame and set aside to cool

  3. Drain and rinse Great Northern beans

  4. In a bowl, whisk together miso, rice vinegar, lime juice, sesame oil, tamari, maple syrup, ginger, and garlic

  5. Add water to thin the dressing to desired consistency

  6. Combine chicken and all chopped salad ingredients (cucumbers, beans, edamame, cabbage, bell pepper, green onions, shallot, jalapeños, and cilantro) in a large bowl

  7. Pour dressing over everything and toss well

  8. Let sit and marinate for best flavor, especially if preparing ahead
