Make hot chips first if using, keep warm in a 100C/200F oven
Mix marinade ingredients together then coat chicken well
Marinate overnight (minimum 3 hours)
Cook chicken 4 minutes each side in a non-stick pan in batches or on BBQ with no oil needed
Rest chicken loosely covered in foil for 3 minutes then slice
Mix all gyros sauce ingredients together
Warm pita bread in microwave for 1-1.5 minutes to make pliable
Smear 3 tbsp sauce down middle of each pita bread
Top with chicken, lettuce, tomato, onion, and chips
Drizzle with more sauce and fold to enclose
Wrap with foil to hold in place and serve with remaining sauce and hot chips
