Elevated Boiled Gammon, Cabbage And Mash Potato
  1. Add the onion and garlic and bay leaves into a very large sauce pot. Add the gammon into the pot and cover in water. Boil for 1.5 hours. Leave to cool in the pot for 30 minutes.

  2. Preheat your oven to 200°C/180°C Fan. Remove the fat from the gammon and cover in the half the glaze. Bake for 20 minutes then brush over the rest of the glaze and bake for a further 15 minutes. Once cooked cover in foil and get started on the sweetheart lettuce.

  3. Brush the halved cabbage leaves with the butter mixture and roast for 36-40 minutes. Halve.

  4. Mash the boiled potatoes until no lumps form then add the remaining ingredients to make the colcannon. Pop in a warming oven until you need to serve.
