Season beef well and sear on all sides
Remove beef, add butter then onion, cook 10 minutes while stirring until caramelizing
Add garlic and cook 1 minute
Add sugar and cook for 3 minutes
Add flour, cook 30 seconds
Add beef and broth, mix well
Bring to simmer, cover and bake at 325°F for 2.5 hours
Remove from oven, ladle out half the sauce
Shred beef, add as much sauce back as desired to your preferred wetness
Set aside, keep remaining sauce to be poured over finished product
For the mac add butter to a pot, melt
Add flour and cook while stirring for 3 minutes
Slowly add milk in thirds then cream, whisking well between each
Add seasonings and Dijon, mix well
Add cheese and stir until incorporated
Add cooked pasta and stir in
Assemble as seen in video
Bake at 450°F for 10-15 minutes until browned to your liking
