Short Rib Mac & Cheese
  1. Season beef well and sear on all sides

  2. Remove beef, add butter then onion, cook 10 minutes while stirring until caramelizing

  3. Add garlic and cook 1 minute

  4. Add sugar and cook for 3 minutes

  5. Add flour, cook 30 seconds

  6. Add beef and broth, mix well

  7. Bring to simmer, cover and bake at 325°F for 2.5 hours

  8. Remove from oven, ladle out half the sauce

  9. Shred beef, add as much sauce back as desired to your preferred wetness

  10. Set aside, keep remaining sauce to be poured over finished product

  11. For the mac add butter to a pot, melt

  12. Add flour and cook while stirring for 3 minutes

  13. Slowly add milk in thirds then cream, whisking well between each

  14. Add seasonings and Dijon, mix well

  15. Add cheese and stir until incorporated

  16. Add cooked pasta and stir in

  17. Assemble as seen in video

  18. Bake at 450°F for 10-15 minutes until browned to your liking
