Copy of Spiced Chickpea Stew With Coconut Milk
  1. In a large pot, heat olive oil over medium heat.

  2. Add chickpeas and cook until slightly crispy, about 5 minutes.

  3. Add garlic, cumin, coriander, turmeric, and cayenne pepper. Cook for another 2 minutes.

  4. Pour in the coconut milk and stock. Bring to a simmer and let cook for 15 minutes.

  5. Add in the dark leafy greens and cook until wilted.

  6. Season the stew with salt and pepper.

  7. Serve hot, garnished with chopped fresh mint leaves.
