Ingredients (Flatbread Base):
1 cup cottage cheese
2 eggs
2 tbsp almond flour
2 tbsp grated parmesan
½ tsp garlic powder
½ tsp Italian seasoning
Instructions (Base):
Blend all base ingredients until smooth.
Pour onto a parchment-lined baking sheet and spread into a thin rectangle.
Bake at 400°F for 35–40 minutes until firm and golden.
Let cool for 5–10 minutes.
Toppings:
2 tbsp light Alfredo sauce
½ cup shredded mozzarella
½ cup sautéed spinach & mushrooms
Pinch of red pepper flakes (optional)
Final Step:
Spread Alfredo over the flatbread, top with spinach, mushrooms, and cheese, then bake another 4–5 minutes until melted and bubbly.
