Skillet Hatch Chile & Ground Beef Dinner
  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the ground beef and season lightly with salt and pepper. Cook until browned and fully cooked (about 5–7 minutes). Drain excess grease if needed.

  2. Push beef to one side of the skillet. Add another tablespoon of olive oil to the empty side, then sauté the diced onion for 2–3 minutes until softened. Add garlic and cook for 30 seconds more.

  3. Stir in the chopped Hatch chiles, corn, and drained tomatoes. Sprinkle in cumin and smoked paprika. Mix everything together and cook for 5–7 minutes to let the flavors blend.

  4. Reduce heat to low. Sprinkle cheese over the top, cover the skillet, and let it melt for 2–3 minutes.

  5. Spoon into bowls or serve with warm tortillas, rice, or over a bed of lettuce for a low-carb option. Garnish with your favorite toppings.
