Start with 1lb lean ground beef. Season with a couple generous pinches salt, fresh cracked pepper, and 2 tsp garlic powder. Mix well. Then form into small, thin patties, you'll get 6-8 patties depending on how thin you make them.
Put the patties on a piece of parchment paper, top with your favorite low carb tortilla, put parchment paper on top and apply some weight on top to spread it out. You want to have a thin layer of the meat covering the surface of the tortilla.
Spread 1 tsp of mustard over each pattie. Let sit while you make the onions & sauce.
To make the caramelized onion, dice up 1 large yellow onion. Add 1tbsp butter to a pan on medium-low heat, add the diced onion & a couple pinches salt, and stir frequently until caramelized. Add 1 tbsp balsamic when they're almost done.
To make the sauce, mix 2 tbsp avocado oil mayo, 2 tbsp unsweetened ketchup, 2 tsp white vinegar, ½ tsp powdered monkfruit sweetener, ½ tsp smoked paprika, 1 tbsp relish (or ½ a small dill pickle, grated).
Spray a pan with cooking spray. Put the tortilla with the meat side down on medium-high heat for 2-3 mins, pressing it down with a spatula to get a nice crust. Flip, tilt a little bit to get rid of any excess moisture from the ground beef, then cook for a minute on the tortilla side down.
Place a thin slice of your favorite cheese on the tortilla meat side up & put the lid on for a few seconds to melt. Remove, then top with lettuce, tomato, a tablespoon or so of the onions, and some of the sauce.
