Creamy Dairy-free Roasted Garlic Spaghetti Squash
  1. Preheat oven to 400°F

  2. Drizzle olive oil over the bottom of a sheet pan and sprinkle with salt. Add squash face down and rub squash along the bottom of sheet pan

  3. Place parchment paper or aluminum foil onto the sheet pan and add garlic heads. Drizzle with olive oil and sprinkle with salt. Wrap the garlic tightly with the parchment or foil and place onto the sheet pan

  4. Place in the oven for 35-40 minutes

  5. When the squash and garlic are done roasting, make the sauce by placing cashews into a blender, then squeeze the garlic into the blender and add the water, coconut oil, lemon juice, salt and pepper. Blend until very smooth

  6. Use a fork to remove the strands of squash from the inside of the squash and place into a bowl

  7. Add the spinach, salt and pepper to taste, and sauce to taste. Toss together until well combined

  8. Serve on a plate and top with pine nuts, lemon zest, Parmesan cheese, salt and pepper
