Baked Zucchini And Tomato Casserole
  1. Preheat oven to 375F. Lightly oil 8x8 baking pan.

  2. Cook minced garlic over medium heat in a small pan with 1 Tbsp olive oil for 1-2 minutes or until translucent and fragrant. Set aside.

  3. A layer of sliced zucchini

  4. A layer of sliced tomatoes

  5. A drizzle of olive oil

  6. Sprinkle evenly with salt

  7. Dash of black pepper

  8. ½ the garlic

  9. ½ the chopped walnuts

  10. Sprinkle evenly Italian seasoning

  11. ½ the Parmesan cheese

  12. Repeat until all ingredients are gone. This should only take 2 layers but it's ok if you keep going.

  13. Coat a piece of aluminum foil with a touch of olive oil. The olive oil prevents the cheese from sticking to the top of it.

  14. Cover with foil. Cook ~ 50 minutes or until zucchini is soft.

  15. Take off cover and brown cheese on low broiler setting for 2-3 minutes (watch it! you don't want it to burn!)

  16. Rest for 10 minutes uncovered before serving. Happy Eating! Beckie
