Zest and juice the grapefruits. Zest first while the fruit is firm then juice all four. Set both aside.
In a saucepan, combine the juice, water, sugar and zest. Stir well to dissolve the sugar evenly.
Bring to a gentle boil, then lower heat and simmer for 10-20 minutes. Stir occasionally to prevent burning.
Turn off the heat. Add lemon juice and optional citric acid for brightness and longer shelf life.
Strain the cordial through a fine mesh sieve to remove pulp and zest. Let it cool to room temperature.
Pour into clean glass bottles or jars, seal tightly and store in the fridge.
