Mexican Manicotti
  1. Cook manicotti according to package directions. Preheat the oven to 400°F.

  2. In a bowl, combine the chicken, ¼ cup salsa, ricotta cheese, olives, parsley, pimentos, green onion, garlic and tabasco sauce.

  3. Drain the noodles in a colander. Let the noodles cool slightly until cool enough to handle. Fill each manicotti with the chicken mixture.

  4. Spread ¼ cup salsa in the bottom of an 8-inch square baking dish. Place the manicotti shells on top of the salsa then top the shells with the remaining salsa.

  5. Cover with foil and bake for 20 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer or until the cheese is melted and the filling is heated through.
