Polly’s Ginger Biscuits
  1. Pre-heat the oven to 180/ Gas Mark 4.

  2. Beat the butter and sugar until pale and creamy.

  3. Add the egg and golden syrup and the liqueur if using, and continue beating until well combined.

  4. Mix the flour and ground ginger into the biscuit mixture and stir until combined.

  5. Stir in the crystallized ginger.

  6. Shape into 20 walnut-sized balls and place on greased or lined baking sheets.

  7. Bake for 12-15 minutes until golden.

  8. Leave on the baking tray until cool enough to transfer to a wire rack.

  9. Allow to cool completely before serving.
