Cuban Pork Sandwich
  1. Combine orange juice, lime juice, onion, oil, garlic, cumin, oregano, salt and pepper in medium bowl, mix well. Place pork in large resealable food storage bag. Pour marinade over pork; seal bag and turn to coat. Marinate in refrigerator at least 2 hours or overnight.

  2. Preheat oven to 325°F. Line shallow roasting pan or baking dish with heavy-duty foil. Place pork in prepared pan with half of marinade; discard remaining marinade. Roast about 3 hours or until pork is tender and temperature reaches 160°F. Let stand at least 15 minutes before slicing. (Pork can be prepared in advance and refrigerated.)

  3. Slice pork. Spread both cut sides of rolls with mayonnaise, then mustard. Top bottom halves of rolls with half of cheese, ham, pickles, pork, remaining cheese and top halves of rolls.

  4. Cook sandwiches in sandwich press, grill pan or hot skillet over medium heat until bread is browned and crisp. (If using grill pan or skillet, use second skillet to press down and compress sandwiches; cook about 5 minutes per side until bread is crisp.)
