Cube the mozzarella and cheddar cheese.
Place the cheese cubes in a Mason jar or Tupperware container.
Add the olive oil, parsley, oregano, basil, shallot, garlic, and sweet red peppers to the jar.
Season with salt, pepper, and red pepper flakes.
Shake or stir to combine.
Refrigerate for at least 4 hours, or overnight.
When ready to serve, add more cheese and fresh herbs if desired.
