Cheesy Beef Enchilada Stacks: A Perfect Family Dinner
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.

  2. In a large skillet, heat a bit of oil over medium heat. Add the ground beef and chopped onion, cooking until the beef is browned and the onions are soft (about 5–7 minutes). Stir occasionally. Drain any excess fat from the skillet.

  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant. Stir in taco seasoning and water. Let the mixture simmer for 2–3 minutes until it thickens.

  4. Spread a small amount of enchilada sauce on the bottom of the prepared baking dish. Place a tortilla on top. Add a portion of the beef mixture, followed by a drizzle of enchilada sauce, and a generous sprinkling of mozzarella and cheddar cheese. Repeat the layers, stacking tortillas, beef, sauce, and cheese. Finish with a final layer of cheese on top.

  5. Place the baking dish in the oven and bake uncovered for 20–25 minutes, until the cheese is melted, bubbly, and golden brown.

  6. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley or cilantro. Serve with sour cream, guacamole, and a simple green salad.
