Tom Kha Gai – Thai Coconut Chicken Soup
  1. Sauté in medium size pot over medium heat in about 2 tbsp coconut oil until tender

  2. Then add chicken bone broth, sub. – chicken stock*

  3. Add coconut milk

  4. Add cooked and sliced chicken breast and cooked shrimp (optional)

  5. Stir well to incorporate

  6. Simmer on low heat for about 5-10 minutes

  7. Finish with a good squeeze of fresh lime juice

  8. Garnish with fresh lime slices, green onion and cilantro

  9. Enjoy !!
