Preheat the oven to 180C
Add all of the ingredients to a bowl and mix until well combined
Place the cookie batter in the fridge for 15 minutes
Once the cookie batter is firm, roll into 10 balls and press each ball down using the back of a spoon
Place in the oven and bake for 18 minutes or until golden
Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 2 months
