Ingredients:
Cook rice: Cook brown rice according to package instructions.
Prepare vegetables: Chop vegetables (bell peppers, broccoli, mushrooms, and mangetout)
Cook chicken: Stir-fry chicken in a hot pan, wok or skillet until cooked through.
Add vegetables: Add bell peppers, broccoli, mushrooms, and mangetout to the wok. Stir-fry until tender-crisp.
Add sauce: Stir in soy sauce, Sriracha sauce, ginger, and garlic. (Mix in bowl with cornstarch first if desire, can also add further seasoning, honey, sugar, chilli flakes etc)
Serve: Serve chicken stir-fry over cooked brown rice.
