Preheat oven to 350°F
Using a stand mixer or hand mixer, cream together butter and brown sugar.
Add eggs, vanilla and ginger and mix.
In a separate bowl combine dry ingredients- flour, salt and baking powder and add to the batter.
Mix on low speed to combine.
Stir in cranberries and white chocolate chips and orange zest, if using.
Line a 15x10 baking sheet with parchment paper and spread the dough evenly onto the baking sheet. This will be challenging, wet the spatula to help spread the dough.
Bake 18-20 minutes until golden.
Once baked let it cool completely before adding icing. I like to remove the parchment paper from the baking sheet and cook it on the counter.
Add cream cheese, powdered sugar, fresh lemon juice, and vanilla extract to a bowl and mix with a hand mixer until everything is combined and creamy - about 2-3 minutes.
Once the baked dough is fully cooled, spread the icing evenly with a spatula.
Then sprinkle the cranberries, add more or less to your preference.
Spread the melted white chocolate with a fork or add it to a ziplock bag and make a tiny hole on the corner and evenly spread the chocolate over the bars.
Let it sit a few hours and cut with a sharp knife or pizza cutter.
First cut into squares then diagonally to make triangles.
It’s MUCH easier to cut after it’s been refrigerated.
