Prepare Crunch Topping. Crush cookies and mix with dry JELL-O. Stir in melted butter until evenly coated, then spread on a baking sheet. Bake for 5-6 minutes at 350 degrees, then let cool.
Bake cupcakes according to package directions and let cool.
Hollow out the center of each cupcake and place a fresh strawberry inside.
Spread a small layer of vanilla frosting on top and dip into the strawberry crunch topping.
Frost again with vanilla frosting, sprinkle with more crunch, and finish with a fresh strawberry on top. Enjoy!
