Finely dice onion and finely chop garlic.
Heat a large frypan on medium-high. Add a drizzle of extra virgin olive oil.
Add onion and cook stirring for a few minutes until softened. Then add garlic for 1 minute.
Add beef mince and break up with a spoon while it's cooking to prevent lumps forming - about 5 minutes until the liquid has cooked out.
Add massaman curry paste and cook stirring to coat the mince for a minute.
Add coconut milk and stock and reduce heat to a simmer for 5 minutes it should thicken slightly.
Stir through chopped baby spinach in the final minute.
Serve with cooked rice, steam greens and chopped peanuts. Fresh chilli and coriander are nice extras.
