Cook the chopped onion until soft then allow to cool.
In a large mixing bowl add ground beef, ground pork and ground veal. Then add eggs, black pepper, garlic powder, bread crumbs, Parmesan cheese, ketchup and chopped onion. Mix, do not overwork.
Pre-heat oven to 400 degrees. On a grated cookie sheet over a drippings pan, shape meat mixture into a loaf, wrap the edge with filded foil and cover with another piece of foil. Bake for approx 30-35 minutes per pound. (Note: this is total loaf weight including all ingredients)
After 30-35 minutes per pound, remove the foil to add the glaze. To make the glaze, in a small bowl, add remaining ketchup and dark brown sugar. Mix well. You can add more or less of ketchup and brown sugar so the consistency and flavor are to your liking. With a spoon spread the glaze all over the top of meatloaf to completely cover it. Bake for an additional 15 minutes or until the glaze is thick and sticky looking.
Take out of oven and let cool for about 10 minutes, then slice and serve. Goes well with gravy, mashed potatoes and vegetables.
