Cowboy Queso - Low Calorie High Protein
  1. Season 16oz lean ground chicken with fennel seed, paprika, garlic powder, and salt to taste

  2. Cook the seasoned ground chicken

  3. Combine cooked chicken with 2 (16oz) low fat cottage cheese

  4. Add ½ cup frozen corn, 1 chopped fresh jalapeño, 1 can rinsed black beans, and 1 can Rotel tomatoes to the mixture

  5. Stir in 1 packet taco seasoning

  6. Mix in 1 cup of the shredded reduced fat cheddar cheese

  7. Transfer to a serving dish and top with remaining ½ cup shredded cheddar cheese

  8. Garnish with optional cilantro, red onion, and Greek yogurt if desired

  9. Divide into 8 servings
