Season 16oz lean ground chicken with fennel seed, paprika, garlic powder, and salt to taste
Cook the seasoned ground chicken
Combine cooked chicken with 2 (16oz) low fat cottage cheese
Add ½ cup frozen corn, 1 chopped fresh jalapeño, 1 can rinsed black beans, and 1 can Rotel tomatoes to the mixture
Stir in 1 packet taco seasoning
Mix in 1 cup of the shredded reduced fat cheddar cheese
Transfer to a serving dish and top with remaining ½ cup shredded cheddar cheese
Garnish with optional cilantro, red onion, and Greek yogurt if desired
Divide into 8 servings
