Slice white onions and caramelize in your pot with 2 tablespoons of butter and olive oil. Add salt and pepper.
Once your onions are caramelized, add 1 tablespoon of butter and the flour. Stir.
Add beef stock, beans, miso paste, and thyme. Mix together and let simmer for at least 10 minutes.
Mix in gruyère.
Serve and garnish with parsley.
