Heat a medium-sized skillet over low heat and grease pan with avocado oil spray.
Add egg whites and cook 1-2 minutes, or until set.
Gently place tortilla on top of the egg whites and cook an additional minute.
Loosen the egg whites with a spatula and flip.
Season with salt, pepper, pepper flakes, or whichever seasonings you desire and add cheese + spinach.
Fold tortilla in half and continue cooking 1-2 minutes or until crispy.
