  2. Let sit for one hour

  3. Perform 4 sets of stretch and folds or coil and folds every 30 mins for 2 hours

  4. Bulk ferment on counter for 4 hours

  5. Split dough into 2 loafs and roll into balls, can add inclusions here

  6. Refrigerate for 2 hours or up to 4 days

  7. Score and bake at 500 degrees with the lid on for 35 mins

  8. Lower to 450 degrees and bake for 10 mins with the lid off, watching for color
