Perfectly Poofy Slightly Crispy Pancakes
  1. Place all of the dry ingredients in one large bowl and put all of the wet ingredients into a big jug apart from the butter.

  2. Grab a balloon whisk and mix everything together until it is just combined. We want to see some lumps of flour in there. Not clumps, just lumps.

  3. Add the melted butter and stir to combine.

  4. Place a pan (ideally cast iron or a good heavy pan) on a medium heat and allow it to get hot enough so that you can hold your hand over it for about four seconds.

  5. Add a teaspoon of a neutral oil and a knob of butter. Allow it to get nice and foamy before adding a generous blob of pancake batter.

  6. Leave it alone until you see bubbles forming on the sides and top, the pancake is visibly cooked halfway but still has a decent amount of wet batter on top, and the bottom is crispy.

  7. Flip the pancake over and allow it to cook for another two minutes.

  8. Repeat with extra oil and butter as needed until all the batter is gone.
