Chicken and Pineapple Salad with Curried Mayonnaise
  1. Toast coconut on oven tray in moderate oven for about 5 minutes.

  2. Cut chicken and pineapple into chunks; place in bowl, mix in coconut, shallots and Mayonnaise.

  3. Refrigerate 1 hour before serving.

  4. For Curried Mayonnaise: Combine all ingredients thoroughly.
