Make quinoa - 1c quinoa, 2c water or broth. Dry toast quinoa for a couple of minutes, add broth, bring to boil, add apple pie spice, then simmer for 20 or so min, until tender.
Stir in 2-3 tbsp honey.
Roast acorn squash, 400+ deg oven for 40-45min.
Dice two apples, lightly sautee if desired, not necessary. Add apple to quinoa.
Crush mixed nuts (cashew, almond, walnut) and add to quinoa mix.
Scoop quinoa mix into acorn squash.
