Acorn Squash
  1. Make quinoa - 1c quinoa, 2c water or broth. Dry toast quinoa for a couple of minutes, add broth, bring to boil, add apple pie spice, then simmer for 20 or so min, until tender.

  2. Stir in 2-3 tbsp honey.

  3. Roast acorn squash, 400+ deg oven for 40-45min.

  4. Dice two apples, lightly sautee if desired, not necessary. Add apple to quinoa.

  5. Crush mixed nuts (cashew, almond, walnut) and add to quinoa mix.

  6. Scoop quinoa mix into acorn squash.
