Quick Rainbow Pickles
  1. Put all the vegetables into a bowl and sprinkle with the sugar and salt. Massage the vegetables gently for a few minutes then drain the excess liquid.

  2. Put the vegetables into a large jar. Pour over the vinegar, plus any extra you might need to half fill the jar.

  3. Top up with water making sure the vegetables are completely covered. Close and shake the jar to mix everything up. Let it pickle for at least 20 minutes and serve.

  4. Keep in the fridge up to five days.
